Weeknight Sheet-Pan Salmon with Vegetables

Ingredients
- salmon fillets4 (6 oz each)
- broccoli florets3 cups
- bell peppers (red or yellow)2, cut into chunks
- red onion1 medium, cut into wedges
- olive oil3 tablespoons
- lemon1, sliced
- garlic cloves3, minced
- saltto taste
- black pepperto taste
- fresh dill or parsley2 tablespoons, chopped

Steps

Preheat your oven to 400°F (200°C).

Place broccoli, bell peppers, and red onion on a large sheet pan. Drizzle with 2 tablespoons olive oil, sprinkle with salt and pepper, and toss to coat.

Roast vegetables for 8 minutes until they start to soften.

Remove pan from oven and push vegetables to the sides, creating space in the center for the salmon.

Pat salmon fillets dry and place skin-side down on the pan. Brush with remaining 1 tablespoon olive oil, top with minced garlic, salt, and pepper.

Lay lemon slices on top of the salmon.

Return pan to oven and roast for 12–15 minutes, until salmon is cooked through and flakes easily with a fork.

Garnish with fresh dill or parsley and serve immediately.
