Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.

Heat olive oil in a large skillet over medium-high heat.

Once hot, carefully place the pork chops in the skillet and sear for 4-5 minutes per side until golden brown. Transfer to a plate.

In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.

Stir in honey, soy sauce, and apple cider vinegar until well combined.

Return the pork chops to the skillet and add the fresh herbs if using. Reduce heat to medium and simmer for 5-7 minutes, turning once, until cooked through (internal temperature 145°F).

While the pork cooks, bring a pot of salted water to boil and add the green beans. Cook for 5-7 minutes until tender-crisp, then drain.

Plate the pork chops and drizzle with the honey-garlic sauce. Serve with the green beans on the side.
